I have recently come into the possession of an electric pressure cooker (6 quart). I have zero experience with pressure cooking. Any tips, suggestions, warning, guidance, or recipes would be welcomed.

I bought an 8 qt duo Instant Pot on AZ Prime day. I haven't used it much because I have been so consumed with the sous vide wand I bought at the same time. However I did make chili in it tonight. Came out well although I had to keep adjusting the recipe. Certainly was a time saver! My absolute favorite use for it so far though has been boiled peanuts. I suggest joining a few IP Facebook groups. Tons of advice and many good hints and recipes in their files sections.

Have an Instant Pot. Love it. My favorite recipe is homemade chicken noodle soup. Pressure cooker chicken breasts 40 minutes in broth, then use broth to pressure cook celery and carrots (only 2 minutes under pressure) then release the steam outside... in the meantime cook fettuccine noodles al dente, then add it all together... flavor with "Better than bullion" paste if chicken broth is not strong enough... yum. (Also put a little Tony Chacere Creole seasoning in)

One Chuck roast, one can French onion soup, one pack French onion soup/dip powder mix, salt and pepper(duh). Cook all ingredients under pressure one hour and 15 minutes. Release pressure and shred the meat like you would pull pork. Serve on hamburger buns with potato chips. Super yummy, cheap and easy way to feed a crowd on the fly.

Or, swap out dry soup mix and add in one or two cans cream of mushroom soup and one or two cans mushrooms. Cook under pressure for one hour, slice and serve over creamy rissoto, rice or egg noodles.

It is the way my daddy made them in the 50s and 60s with the old stovetop cookers that tended to explode now and again. Times vary greatly between using fresh green goobers and uncooked dried ones. Greens can be ready in 30-45 minutes. As far as dried go, which I have now, they can vary from time of harvest and other factors. In general I have found that 75-90 minutes followed by a natural pressure release works well. Just depends on whether you like yours al dente or mushy. I suggest starting with lower times since you can always give them another 10 minutes or so if needed.

I make lots of different brines. This next batch will use either Zatarain's liquid crab boil or Old Bay. Note also that these suckers like to float. Use the trivet or a saucer or some such on top of them to keep them submerged.

That stuff is fantastic. It's also a lot cheaper than buying stock and broth, so we just buy that now....saves a lot of space in the kitchen cabinets.

We found a Breville Fast Slow Pro for $140 at Homegoods on Harbison over the weekend (on Amazon it's $250, so it was a good deal) so we are officially owners of a electric pressure cooker! Made some kale & white bean soup over the weekend and it was awesome.

If anyone is interested, we saw another one at the Marshall's on Harbison, might still be there. There seemed to be a decent amount of Breville appliances at Marshalls and Homegoods...panini presses, waffle makers, etc. The waffle maker was pretty funny. It uses "waffle IQ" and let's you adjust how browned/crisp you want it, and also has a diagram showing how it's waffles have a deeper cup in order to fit more toppings. Way to sell a waffle maker, Breville.

Breville makes excellent products. I have not seen anything about their PC though. Most of the recipes are interchangeable however. There are some very good FB groups ranging from newbie to specific PC cuisines such as Indian and Korean.

For St Patrick's Day we were at my DIL house and they used a pressure cooker for corned beef and cabbage with potatoes. It was awesome! Very fast and delicious and safer than I thought. May break my rule and get one for my anniversary in late April.
